   Al Pacino’s favorite pasta? It’s Spaghetti Aglio e Olio, (Spaghetti Garlic & Oil). Al’s favorite. I know. Al used to come to the restaurant Barbetta, in New York’s theater district. I was the wine director there. Mr. Pacino once asked me, “Can you guys make me Spaghetti Aglio e Olio.?” To which I replied, “Of course we can. For you Mr. Pacino, we will make it.” And so we did. We had. He made us an offer we couldn’t refuse. The dish, as you should well know, is beloved by most Italians, whether in Italy, or here in America. We Italian Americans just love it. Especially in the New York Metropolitan area of New York & New Jersey. We grew up with it, as Al Pacino growing up as a boy in the Bronx, New York, and as a young man living in Manhattan. It’s part of his life, and is in his blood. He’s Italian. Italian-American from the Bronx. New York Italians? We love: Baked Clams, Sunday Sauce, Lasagna, Meatballs, Linguine Vongole, and yes, as Mr. Pacino, “Spaghetti Aglio e Olio.” 


  Take note, that Parade Magazine April 1, 2025 picked up on my story of Al Pacino and myself (Daniel Bellino Zwicke). The wrote a little piece, quoting me, and telling the story of Al Pacino and me. That night at Barbetta, and the subsequent act of me telling the story (with recipe) in my book Positano The Amalfi Coast – Travel Guide – Cookbook. Parade magazine picked up on it, and my story and Al Pacino and I (Daniel Bellino) has snowballed, in print and all over the internet. And yes, “I’m proud it is.”

   And so I could not resist telling the story again. The story and myself – Daniel Bellino Zwicke, and the great Al Pacino. I’ve been a huge fan, as most Americans of Mr. Pacino for some 50 plus years now. “We are Paisons,” and blood brothers in a way. We are both Italian-American New Yorkers, with Sicilian ancestry and roots, from the same area of Sicily. Al Pacino’s family, believe it or not, are from Corelone, Sicily. Yes I said Corleone, the same town in Sicily as the fictional character Pacino played in the movie The Godfather, as one Michael Corleone, whose father Vito is from the Sicilian town Corleone. 

  My family, the Bellino’s are from the nearby town of Lercara Friddi, Sicily, the same town that the famed Mafia Boss Charles “Lucky” Luciano is from, as well as Frank Sinatra’s father – Martino Severino Sinatra. That’s our connection – Frank Sinatra, Al Pacino, and Me – Daniel Bellino.

  And yes, I greatly admire both Frank Sinatra, and Al Pacino, and I’m proud of our small connection as Sicilian Americans. “Paisons.”

PASTA alla PACINO – RECIPE


INGREDIENTS :

8 ounces imported Italian Spaghetti

8 tablespoons Olive Oil

5 cloves of Garlic, peeled and sliced 

½ teaspoon Red Pepper Flakes

2 tablespoons fresh chopped Parsley (optional)


Note : Make sure to use good quality imported Italian Spaghetti, and Italian Olive Oil.

Fill a 3-4 quart pot ¾ full of water and add 1 teaspoon Sea Salt. Turn heat to high and bring the water to the boil.

Add olive oil and the garlic to a large frying pan. Cook on low heat until the garlic just starts to brown. Turn the heat off. Add the red pepper and stir.

Drop the spaghetti into the boiling water. Cook, following the directions on the box (about 9 – 10 minutes).

When the spaghetti is finished cooking, drain it into a colander, reserving about ¼ cup of the pasta cooking water.

Reserve a ¼ cup of pasta water to mix into the finished plate of pasta.

Place the drained spaghetti into the pan with the garlic & olive oil. Toss and mix the spaghetti so it is completely coated with the sauce. Add a little of the parsley and a little of the pasta cooking water if needed. Mix everything together.


Plate the spaghetti on two plates, dividing it evenly.  Sprinkle on the remaining Parsley. Serve immediately. It does not require cheese, but you may put on a little if you like. Just not too much. Enjoy.

Note : Yes, this book is all about Italian Nonnas and their wonderful home-cooked Italian food recipes. Going a little bit out of that realm with this story and recipe of Al Pacino’s favorite pasta – Spaghetti Aglio e Olio. Yes. Well yes and no. Al is Italian, of Sicilian ancestry, and though he does not at the time of this printing have any grandchildren, but we are certain with having 4 children that he will one day have grandchildren and become an Italian Nonno.

The PERFECT AMERICAN DINNER 



The perfect American dinner. What is it you ask? Well I don’t know. All I know is what I made for dinner tonight could be in the running. For 1, it’s oh so very American. What is it you say? OK, I’ll tell you. It’s a Cheeseburger and some tasty Cremesicle Ice Cream. “What’s so Special about that, ” you say. Well for one, I make one of the Best Damn Cheeseburgers you’ll ever eat. “It’s Damn Good.” So damn good ! Better than good. It’s delicious. I know how to make a burger. And some Creamsicle Ice Creme? I haven’t had it for years. Love it. Since childhood, way back in the 60s. “If You Know – You Know.”

Anyway. I was at the cafe working on stuff (writing), and what for dinner I thought. I finished the Chili that I make my Tacos with last night, so what for tonight. “A Burger I think” ? And when I say burger, it’s always a cheeseburger. “For sure.” So I made my way to the supermarket to get some good ground beef. And when I say good, I mean good. Get the best you can. I walked in the store, and got a flyer (sale items). I browed it over. “Ah. Turkey Hill Ice Cream is on sale. I’ll get some of that.” I don’t throw my money away, and always buy ice cream when it’s on sale. Today is the day. I went over to the meat counter and looked over the meat. OK, Ground Angus Beef Chuck (80/20) for $7.99 a pound. I got one. A pound. All set. Now over to the ice cream. Looked over what they had, and when I saw the turkey Hill “Orange Cream Swirl” I went nuts. “Yeah.” It instantly made me happy. I thought of my childhood and how much I loved this wonderful combo of lush Vanilla Ic Cream & Orange Sherbet. What a combination. “So good” !!! I had to get some. And so I did. I also got a new jar of dill pickle chips, and some New York State Cheddar to top my burger. I was all set.

I paid for the stuff and made my way home. I sliced the cheese first and set it aside. I got the BBQ Sauce, Mustard, Burger Bun, and salt and black pepper at the ready. Set my small frying pan on the stove, shaped my burger, and put a little olive oil in the pan. Threw the burger in and toasted my bun (Haha!). I seasoned the burger with salt & pepper as it was cooking. After a couple of minutes, I flipped the burger over. I seasoned the other side, and let the burger continue cooking. After a couple minutes, it was done.

I placed the Cheddar Cheese on the bottom bun and set the burger on top. Then I put a bit of Dijon Mustard on top of the burger, and on top of the mustard I put some BBQ Sauce. Put on 3 dill pickle chips, and topped it with the top bun, and I was ready to go. Ready to eat one of the best burgers in town. I kid you not. “If I must say so myself, I make one of the Best Damn Burgers in Town!” That’s a fact. I bit in. “Yumm. So good.” I told you. I ate the burger (cheeseburger) as slowly as I could. Didn’t want to rush a good thing. Well I finished it. I enjoyed it, and I didn’t get ripped off, paying maybe $24 for a burger, plus tip and tax, and you probably have a drink, so by the time you’re done, you might have spent $60 or more for a burger and one drink. “Not me!” My burgers are better than practically and place in New York, so why throw my money away.

Now, on to dessert. Yes my Orange & Vanilla Creamsicle. “OMG?” The temperature and texture were just right, being outside of the freezer for about 40 minutes. I got my bowl and tablespoon and I dug in. Again, “Oh My God” ? So Good !!! Just like when I was a child in the 60s. I could not have asked for more.

And so, one of the Best Damn Dinners in all of New York City. Maybe not? I know many might not agree. But then, on the other hand, there’s probably million people or more, just in New York City who would agree. And that’s good enough for me.

This dish was one of Casanova’s all-time favorites. It’s an extravagant dish that is great for parties, as its extravagance is what makes it special. It is a special celebration dish that most people may have never seen, so if you take the time to make it, it is quite gratifying, and is sure to immensely please your guests, as it did the great Venetian Lover – Giacomo Casanova.



RECIPE – 


“CASANOVA’S VENETIAN MACCHERONI PIE”



PIE DOUGH – INGREDIENTS : 


1 pound all purpose Flour

1 teaspoon Salt

12 ounces (3 sticks) Butter


Place all ingredients in a food processor. Turn on and pulse just as everything forms into a ball. Stop mixing immediately. 


Place dough on a lightly floured board or table and knead by hand for 5 minutes form into a bowl. Cover and refrigerate.


CHICKEN LIVERS : 


1 pound Chicken Livers

2 tablespoons Butter

1 small Onion, peeled and finely chopped

¼ cup – Sherry, dry Marsala, or Vin Santo

Salt & ground Black Pepper to taste

1 tablespoon Balsamic Vinegar


Add butter and onions to a large frying pan. Cook on low heat for 4 minutes, as you stir. 


Add the chicken livers and cook on low heat for 4 minutes. Add the Balsamic Vinegar and wine and cook on medium heat for 3 minutes. 


Turn heat off and set aside to cool.


FILLING : 


1 & ½ pounds ground Pork

2 ounces Dry Porcini Mushrooms

1 medium Onion, peeled and chopped fine

2 tablespoons Butter

½ teaspoon each of Salt & ground Black Pepper

½ teaspoon Cinnamon

2 pinches each of Nutmeg & ground Cloves

2 tablespoons Tomato Paste

⅓ cup Red Wine


Place dry Porcini Mushrooms in a bowl of warm water, just to cover. Let the porcini soak for 20 minutes. Remove from water. Wash two times with cold water. Chop and set aside.

Place the ground pork in a large pot with  half the butter. Cook on low heat for 6 minutes until the meat is cooked through. Season with Salt & Black Pepper and stir.


Add the wine and cook on medium heat for 5 minutes.  Add all remaining ingredients and stir. Turn heat to high, and bring everything up to the boil. Once everything is boiling,  turn heat to very low, and let simmer on low heat for 1 hour. Be sure to stir with a wooden spoon, scraping the bottom of the pot with the spoon to keep from sticking and burning. Be sure to stir every few minutes. Turn off after 1 hour & let rest.


BECHAMEL : 


1 quart Milk

4 tablespoons butter

¼ cup Flour

1 Bay Leaf

¼ teaspoon each Salt & White Pepper

pinch Nutmeg


Melt the butter in a medium pan. Add flour and cook on low heat while stirring with a wire whip for 5 minutes.


Increase to medium heat and slowly pour in the milk while stirring. Add bay leaf, salt & white pepper.


Add a pinch of Nutmeg, and cook over low heat for 10 minutes while stirring.




1 pound fresh BUTTON MUSHROOMS


Clean the mushrooms and cut in half. Saute the mushrooms for 5 minutes in 1 tablespoon of butter, with a pinch each of salt & black pepper for 6 minutes over low to medium heat. Set aside.


1 pound frozen PEAS, defrosted



MACCHERONI 


1 pound Short Pasta – Rigatoni, Ziti, or other


Cook the Maccheroni in salted boiling water for 8 minutes. Remove from heat and drain in a colander.

Remove pie dough from the refrigerator. Cut the dough into 2 pieces by cutting off a third of the dough that will be the top of the pie. The larger piece is for the bottom.


Place the larger piece of dough onto a lightly floured surface. Roll the dough out to normal pie size. Place into a 10” Springform pan.

Mix the ground pork mixture, peas, and cooked button mushrooms with the chicken livers. Place this mixture into a large bowl with the cooked maccheroni (pasta) and grated Parmigiano cheese and mix. Add ⅔ of the warm Bechamel, and grated Fontina Cheese and mix.


Place the filling in the pie shell. Roll out the smaller piece of dough until it is the thickness of a pie, and top the timballo.

Crimp the dough together with your fingers.

Place in a pre-heated 350 degree oven and bake for 1 hour.


Remove from the oven, and let cool a bit before serving.


Cut each person a generous portion of the Maccheroni Pie. Drizzle a little of the remaining Bechamel Sauce over each person’s serving, with a little grated Parmigiano on top, and enjoy like Casanova.


“SPECIAL ADDED TREAT” Black Truffles


This is an optional add-on that would be most delightful, and keeping with the Casanova’s desire for the best of life’s pleasure, would be to add a dollop of “Black Truffles” to each person’s dish.


You can buy some Black Truffle Pate on  Amazon, made by “La Rustichella.” It’s just about $20 for a jar, and completely worth the extra extravagance. “Casanova surely Would.the ground pork mixture, peas, and cooked button mushrooms with the chicken livers. Place this mixture into a large bowl with the cooked maccheroni (pasta) and grated Parmigiano cheese and mix. Add ⅔ of the warm Bechamel, and grated Fontina Cheese and mix.

He’s a Best Selling Cookbook Author and one of New Yorks Top Big Dogs of Italian Wine, a former Chef of such restuarants as; Woods, Corrado, and Bar Cichetti … Daniel was in the Hotel/Restaurant Mangement at New York Techenical .. Besides being the chef at the previous named restuarants, Daniel worked with Michel Fitoussi at the famed Palace Restaurant in the late 80’s as well as at the Odeon under the great Patrick Clarke.

Daniel got out of the kitchen in the late 90’s to become The Maitre’d at the uber hot # 1 Celebrity Hot Spot Da Silvano where he took care of people like; Keith Richards, David Bowie, Paul McCartney, Uma Thurman, Richard Gere, Joe Pesci, Robert DeNiro, Calvin Klein, Nick Pileggi, Nora Effron, Graydon Carter, Gwyneth Palthrow, Madonna, Lucy Lui, and-on-and-on, the list is way to long to name them all.

Daniel took care o f the high-flying cliental of the Top People in The Fashion World, Record Business, Publishing, Movie Stars and Rock Stars and is known for his easy going abilty of taking care of all the big stars needs in a casual attentive manor without being intrusive in any way, reasons for him being well known to The Movers & Shakers of  these high profile business fields.

Daniel had made quite a name for himself as the creator and Executive Chef / Wine Director and Managing Partner of Bar Cichetti, the 1st ever Venetian Wine Bar (Bacaro) in America, which was Daniel’s proud creation. As Chef / Wine Director of Bar Cichetti, Daniel firmly establsihed himself as one of New York and America’s Top Italian Wine Guys .. He is personal friends with most of Italy’s top wine producers, the likes of; Marchese Ferdinando Frescobaldi, Sebastiano Rosa winemaker of Sassicaia, Marchese Piero Antinori of Antinori Wines, Givanni Folnari of Nozzole, Gianlucca Grasso, Gianpaulo Venica, Cavalier Luigi Cappellini of Castel Verrazzano, and-on-an-on, just like all the Movie Stars & Rock Stars that Daniel knows, the list of Italian Wine Luminaries is even greater.

As we’ve already stated, Daniel left restaurant kitchens behind to become a noted Italian Wine Guy and Maitre’d who really knows how to take care of those  high-end clientel. But not only them of course, there’s everyone else, shall we call them the regular folk? Hey, they make up the bulk of any restaurant business, not the celebs, though celebrities help to draw in everyone else. Daniel will take good care of you as a number of his clients we have interviewed can tell. He friendly and quite personable and he really knows his stuff and has a passion for the food and wines of Italy that’s almost impossible to duplicate. Frankly, Daniel is the best. He can tell you wonderfule stories about the wine you are drinking, its history, the owners and people who make the wine (his Friends) and his trips to all these Wine Estates all over Italy. And his knowledge and passion for the food is equal to his knowledge of Italian Wine. Often you’ll be drinking a bottle of Italian Wine that Daniel suggets and he’ll pull out his iPhone and show you pictures of the people who own the estate and make the wine. One example would be Daniel’s good friend Luigi Cappellino who owns Castel Verrazzano in Greve in Chianti (Tuscan) Italy. After 5 years at DaSilvano, Daniel went on to become the Wine Director of Barbetta Restorante on West 46th Street in New York to head up the Greatest Italian Wine List in all of America. Daniel says, “the cellars are amazing.” Places like Babbo and Del Post get more press for having great Italian Wine List, which they do, but Daniel says, “The Wine List of Babbo & Del Posto are awesome, but in comparison to Barbetta, they are Childs-Play.” No exageration, merely fact Daniel says. Daniel said he was quite fortunate in his job as Wine Director of Barbetta for 5 years as he was able to taste and drinks so many of these great Barolo Crus of various vintage, as well as all the multi vintage; Barbaresco, Amarone, Brunello, Super Tuscans, Champagne, and the top California Cabernets and Meritage Blends such as Opus One and Insignia.

Daniel had been writing for years, mostly essays, articles, and short stories. He wrote his first book La TAVOLA while he was at Barbetta in 2006 .. He said that 85% of the book was written in about 6 weeks time (quite fast), however he edited, polished it up and worked on it for another year before trying to get it published, which took five years. Actually La Tavola was published in June of 2012, followed by The FEAST of The 7 FISH which is the top selling cookbook of its genre. Daniel published Got Any Kahlua? The Collected Recipes of The Dude in the Summer of 2013, followed by SUNDAY SAUCE which has been a # 1 Best Seller Italian Cookbooks on Amazon for 5 months … Daniel published another # 1 Best Seller in June of 2014 with SEGRETO ITALIANO / Secret Italian Recipes & Favorite Dishes ..

Monday, April 21, 2025 … It’s a sad day for 100 of Millions of People all over the World, especially those of The Catholic and Christian Faith, and even for many who are not Christians. Pope Francis, Papa Francisco millions of Latin peoples was beam of Wonderful Light for the people of The World. He was always smiling, and that warm, beautiful smile of his was pure joy for all those who saw it.

Being in the restaurant business in New York for many years, I saw, met, and conversed with many celebrities over the years, Paul McCartney, Mick Jagger, Richard Gere, Tony Bennett, Mickey Mantle, and so many more. I’m not going to try and sound to cool for school, that it didn’t matter, or that it wasn’t exciting to meet so many celebrities, like many New Yorkers pretend that it isn’t a thrill at all. “It is,” and I’ve enjoyed meeting and chatting with them. 

I never saw (in person), or met Pope Francis. No, I’m sure he never would have wanted to be called a Celebrity. He was a modest man, but without question, he was. A celebrity. According to Websters Dictionary, a Celebrity is – a famous or celebrated person, someone who is famous. And Pope Francis certainly was. I never saw or met Papa Franciso. I would have loved to. The man was warm, caring of others, sweet, and wonderful, and he made the World feel good. He was The Pope who was closer to people, more so than any Pope who ver lived. No other Pontiff came close to Pope Francis (Mario Bertoglio) of Buenos Aires, Argentina.

I’m not very religious at all, but I am a believer and I do love people who are, warm, wonderful, caring people. People like Mario Bergoglio, Pope Francis. From the moment he was was elected Pope, Mario Bergoglio has been a shining light to millions. We felt his warmth simply by seeing a picture of him in a newspaper or magazine, seeing his warm smile, and witnessing his affection for children, and all of the people of the World. Pope Francis brought hope, understanding, and happiness to his many millions of followers, and we (myself & millions) will surely miss this beautiful man, who served his faithful so well, and should be a model for all Pope’s who follow in his footsteps. And we wonder what kind of a man, and leader of The Catholic Church, the next Pope will be. Papa Francisco is going to be a hard act to follow. We all loved him so very much, and we will miss him. Rest in Eternal Peace dear Jorge (aka Pope Francis), We Love You, and as you often asked “We Pray For You,” may God Bless You Always.

I got lost in VENICE at Night. It was my first night there and my first trip ever to Europe. I was a young man of 23 and relatively new in my travel experience, how to get around and what to do. Yes I got lost and the Magical Maze, The Labyrinth that is Venice, with its winding streets, many bridges and narrow alleyways.

I learned a very important travel lesson that night. One of the first things you should ever do as you are in a new city and check into your hotel. While you’re at the desk, make sure to take a couple Business Cards of the hotel. Put one in your wallet or purse immediately, and put another in one of your pockets. If you ever get lost, you can give it to a Taxi Driver (Not in Venice though) and tell him to go here.

Yes, I got lost in Venice. I didn’t feel it at the time, but it’s a quite Wonderful thing to do, getting Lost in Venice.

I found this wonderful little Hotel in 1995, on my special trip to Explore the BACARI (Venetian Wine Bars) of VENICE. I had read a tiny little article about them in the New York Times that peeked my interest and inspired me to open one in New York. I book a trip for 8 days in Venice to explore, feel, experience and find out everything I could about the Wine Bars of Venice (Bacari). And I did just that. With the knowledge of that trip and my many years experience in the restaurant business in New York, I made a business plan, found a partner to join me, and I created the First Ever Bacaro in The United States, called BAR CICHETTI in New York’s Greenwich Village. Basta !

I got lost in VENICE at Night. It was my first night there and my first trip ever to Europe. I was a young man of 23 and relatively new in my travel experience, how to get around and what to do. Yes I got lost and the Magical Maze, The Labyrinth that is Venice, with its winding streets, many bridges and narrow alleyways.

I learned a very important travel lesson that night. One of the first things you should ever do as you are in a new city and check into your hotel. While you’re at the desk, make sure to take a couple Business Cards of the hotel. Put one in your wallet or purse immediately, and put another in one of your pockets. If you ever get lost, you can give it to a Taxi Driver (Not in Venice though) and tell him to go here.

Yes, I got lost in Venice. I didn’t feel it at the time, but it’s a quite Wonderful thing to do, getting Lost in Venice.

I found this wonderful little Hotel in 1995, on my special trip to Explore the BACARI (Venetian Wine Bars) of VENICE. I had read a tiny little article about them in the New York Times that peeked my interest and inspired me to open one in New York. I book a trip for 8 days in Venice to explore, feel, experience and find out everything I could about the Wine Bars of Venice (Bacari). And I did just that. With the knowledge of that trip and my many years experience in the restauranat business in New York, I made a business plan, found a partner to join me, and I created the First Ever Bacaro in The United States, called BAR CICHETTI in New York’s Greenwich Village.

I had read a little article in The New York Times about Venice, that mention the Bacari (Wine Bars) of Venice, and that’s all it took. Just a little mention (one Paragraph) of these particular type of wine bars of Venice sparked my interest, and I just had to go to Venice and find out as much as I could about them, for I instantly felt that I wanted to open one in New York (which I did).
